Instructions
Cut the chicken into ½-inch cubes and season with a pinch of salt and pepper. Break up any clumps in the chilled rice with wet fingers. According to the USDA, chicken must reach an internal temperature of 165°F (74°C) to be safe to eat.
Heat 1 tbsp oil in a large wok or skillet over high heat. Add the chicken and stir-fry 4-5 minutes until golden and cooked through. Remove and set aside.
